Creamy Chicken and Mushroom Rice

A quick and hearty chicken meal made with items easily in your pantry and fridge.

  • 2 lbs diced chicken breast
  • 4-5 strips pre-coooked bacon
  • 2 14 oz cans Cream of Mushroom soup (or one 28 oz) Cream of chicken also works well with this
  • 1/2 stick butter
  • 1/2 tsp minced onion
  • 1/2 tsp garlic poweder
  • 1/2 tsp Tony Chachere's creole seasoning optional
  • 1 tsp onion powder
  • 2 tbsp parmesan cheese
  • 2 tbps white wine I used Barefoot Pinot Grigio
  • 3-4 cups rice, cooked, to package directions any pasta is also good with this dish
  • Salt and Pepper to taste


  • Brown chicken with salt and pepper until thoroughly cooked. Add Cream of mushroom soup, all seasonings and cook until hot and simmering, add wine and parmesan cheese. Heat until hot. Serve over rice
    ***Sliced mushrooms can be added for additional flavor.
    ***A handful of spinach can be added for additional flavor and color
